homemade falafel salads have been my go to for lunches to take to work recently and I wanted to share the recipe with you all
-add about two cups of chopped onions and 3 garlic cloves to a food processor until they are finely minced.
-Remove the mixture and set aside.
-Add about 2 cups of chickpeas, 1 cup parsley, 1 cup cilantro, salt, chili powder and cumin to the food processor and pulse until blended ( make sure it does not get puréed)
-add the onion mixture back into the food processor and add 2 tsp baking powder
-add about 1/4 cup all purpose flower to the good processor until the mixture begins to form a small ball ( you can add up to 1/2 cup depending on how wet the mixture is)
-chill the mixture in the fridge for 1 hour
-once the mixture is complete form into mini balls and cover in a little bit of olive oil
-bake in the over at 350 degrees for about 1 hour or until the falafel is properly cooked
mix 1 cup of tahini paste ( I used the one from @traderjoes ), 1/4 cup water, 1 tbs lemon juice, 1 tbs olive oil, 1 finely chopped garlic clove, salt, pepper and some @traderjoes chile lime seasoning
Salad details : I used salad mix I got from @aldiusa , added some chopped cherry tomatoes, the falafel, @mina harissa sauce and the tahini dressing!!
