Did you know that you could turn sweet potatoes sexy? No? Well, I am here to tell you otherwise ;) There is ten feet of snow outside again, curtesy of a freak, winter storm. As such, a delicious, homemade risotto was in order!
Tonight we made a roasted sweet potato risotto, and honestly...we have no regrets ❤️👌 Ingredients: •1 large sweet potato, peeled and chopped small
•1/4 tsp paprika
•1/4 tsp salt and pepper •3 tbsp olive oil
•2 tbsp butter
•1 onion, diced
•2 cloves of garlic, minced
•1 1/2 cups Arborio rice
•1/3 cup mirin + 1 cup water
•4 cups chicken stock •1/3 cup Parmesan cheese
•3 slices bacon, cooked and crumbled
•extra Parmesan for sprinkling on top
Directions •Preheat oven to 400 degrees. Using a bowl, combine chopped sweet potatoes with 2 tablespoons olive oil, salt, pepper, and smoked paprika, tossing well to coat. Spread on a baking sheet lined with tinfoil, and roast for 30 minutes, tossing every 8-10 minutes. Remove and mash until pureed with a potato masher, then set aside. •In a microwave safe bowl, heat chicken stock in device. We used glass measuring cup. •Using a wok or large bowl, warm to medium heat on stove. Add in remaining olive oil and butter, then add onions. Stir to coat and cook for 2-3 minutes until soft, then add in garlic and cook for just under a minute. Increase heat slightly and add rice, stirring to coat. Cook for about 5 minutes, stirring 2-3 times until the rice is translucent and begins to toast. Reduce heat to medium-low and add in mirin and water. Continue to stir as the rice absorbs the fluids. When most of it is absorbed, add in about 1/3 of the warm chicken/vegetable stock. Repeat the process, continuously stirring until the stock is absorbed, then add another 1/3. Repeat until all of the stock is used and absorbed and the rice is cooked, making sure to take a spoonful and taste test. The whole process will take about 30 minutes. If the rice is still too chewy and dense, heat a bit more liquid and add it again, stirring. •Once rice is cooked to your liking, add mashed sweet potato and patiently add it to risotto. Take care to combine it evenly. Stir in Parmesan. Add bacon and parm to finished product.
